The Council is looking for both long‑standing favorites and hidden gems that deserve wider recognition.

Launched in 2025, the Wisconsin Prime Rib Trail was created to showcase the state’s thriving beef industry and to connect diners with establishments that serve high‑quality, locally sourced prime rib. The trail serves as a tourism guide, encouraging families and visitors to explore Wisconsin’s culinary landscape while supporting local beef producers.

About the Wisconsin Beef Council

The Wisconsin Beef Council is a producer‑directed nonprofit funded by a $1.00 per head assessment on all cattle sold in the state, as authorized by the Federal Beef Promotion and Research Act. Half of the assessment remains in Wisconsin to fund local beef promotion, while the other half is sent to the Cattlemen’s Beef Board. The Council’s mission includes beef promotion, research, and consumer education to support the state’s $2.1 billion beef industry.

The Council operates under a Board of Directors composed of representatives from cattle‑related organizations throughout Wisconsin, ensuring that the industry’s voice is reflected in its programs.
