Chef Dustan Bristol has been the driving force behind Brick 29 since it opened, and his philosophy is evident in every dish. The menu leans into Pacific Northwest and locally sourced ingredients, changing with the seasons in ways that keep regulars coming back to see what is new. On a recent visit, the house-cured charcuterie board arrived as an artful study in restraint — thin-sliced meats, a smear of whole-grain mustard, cornichons, and a wedge of local cheese that needed nothing extra. It set exactly the right tone for what followed.

The entrées are where Brick 29 really distinguishes itself from its peers. A pan-seared Idaho trout with brown butter, capers, and a bright herb salad is the kind of dish that makes you slow down and pay attention. The braised short rib, when it appears on the seasonal menu, is fork-tender and deeply savory, plated with roasted root vegetables and a red wine reduction that you will want to mop up with the house-made bread. Portions are generous without being excessive, and the kitchen clearly respects quality over volume.

The wine list is compact but well-curated, with strong representation from Idaho and Pacific Northwest producers — a small point of local pride that deserves recognition. The cocktail program is equally considered, with a handful of house originals alongside the classics, each made with care rather than flash.

Service at Brick 29 is warm and knowledgeable without hovering. The staff can tell you where the vegetables came from, suggest a wine pairing with genuine conviction, and still leave you to the pleasure of your own conversation. That balance is rarer than it should be.
