Spinning Plates and Slow Burns at Smyth in the West Loop

Oriole is a two-Michelin-star restaurant on the near West Side, and it’s probably the most quietly serious dining room in Chicago.

I want to say “quiet” carefully here, because it doesn’t mean stiff or cold. The room — a converted industrial space on North Carpenter Street, just south of Fulton Market’s bustle — is spare and warm at the same time. Dark wood, soft lighting, a kitchen you can partially see from some seats. The staff are attentive without hovering. There’s none of the theatrical tableside drama some fine-dining places lean on. Oriole just feeds you, exceptionally well, and trusts that to be enough.

Chef Noah Sandoval runs a single tasting menu, usually somewhere between twelve and sixteen courses depending on the night and season. Last time I went, it ran about $275 per person before drinks, tax, and tip — so yes, you’re planning for a $400-plus evening for two before any wine. The wine pairings are worth considering; sommelier Cara Sandoval (Noah’s wife, and co-owner) has put together a list that leans toward bottles you won’t see at most restaurants. Her pairings are smart without being showy.

The food itself resists easy description, which is part of the point. Sandoval works with high-quality local and seasonal ingredients but doesn’t make a performance of provenance. A course might be a single perfect bite — something briny and cold — followed by something rich and slow-cooked, followed by something you’d never expect to love but do. There’s a coherence to the progression that becomes clearer as the evening goes on. By the time dessert arrives, you realize you’ve been on a very considered ride.

Oriole is reservation-only, and seats book out weeks — sometimes months — in advance. They release reservations on a rolling basis; I’d check OpenTable or the restaurant’s own site monthly if you’re trying to get in on a particular date. They do offer a bar counter with a shorter, slightly less expensive experience, and that’s worth knowing if the full tasting menu feels like too large a commitment.

The address is 661 W. Walnut Street. Parking in the area is possible on side streets, but an Uber or Lyft makes more sense given the wine situation. The restaurant is technically in the Fulton Market District, though it sits a few blocks from the main drag — which honestly suits it. Oriole doesn’t seem interested in being part of any scene.

I’ve eaten here twice, once for a birthday and once just because I’d saved up the occasion budget and wanted to spend it right. Both times, I left feeling like I’d been genuinely cooked for by people who cared about every decision on the plate. That’s rarer than the price tag suggests, even at this level.

If you’re on the fence about whether a tasting menu at this price point makes sense, the honest answer is: not for every night, and maybe not for everyone. But if you like food that rewards attention, Oriole is worth the planning.
