Pho Que Huong’s Neighbor Does Dim Sum Differently

Ask anyone who grew up eating dim sum in Dallas, and they’ll probably tell you the same thing: most places make you wait for a cart that never comes, or they hand you a checklist and the magic disappears. Golden Dim Sum on Josey Lane in Carrollton does neither. What you get here is something closer to what dim sum used to feel like before it became a brunch event — quick, loud, a little chaotic, and genuinely good.

The man running the kitchen most mornings is a compact, fast-moving guy who goes by Chef Lin. He’s been doing this for over two decades, first in Houston, then briefly in Vegas, and for the last several years right here in a strip mall off Josey near Keller Springs. He doesn’t come out front much, but his presence is felt in the way the har gow arrives — thin-skinned, tightly pleated, still steaming — and in the fact that the turnip cake actually has texture and flavor instead of tasting like compressed nothing.

You’ll probably sit at a round table with a lazy Susan, and if you come on a Saturday or Sunday morning, the room will be fuller than you expect. This is a working dining room — not decorated, not ambient. Fluorescent lights, round tables pushed close, families with grandparents and toddlers and everyone in between. The staff moves fast. If you don’t know what you want, point at what’s on the neighboring table. Nobody minds.

Order the siu mai first, then the cheung fun with shrimp. The cheung fun here is rolled to order, which matters — the rice noodle stays soft and doesn’t get gummy the way it does when it’s been sitting. After that, get the sesame balls if you see them going past; they sell out. The pork riblets with black bean sauce are worth ordering even if you normally skip them. The char siu bao — the baked version, not the steamed — is reliably good, with a filling that actually tastes like barbecue pork and not just sweet paste.

Dim sum here operates on the traditional model: you pay by the number of plates, and the bill comes out lower than you’ll expect. Two people eating seriously, with tea, will spend somewhere around $22 to $30 total. If you bring four people and order broadly, you might hit $50, and you’ll be full.

The tea service is no-frills — they bring a pot and refill it, and you’ll flip the lid when it’s empty. Pu-erh is the right call here, something to cut through the dumplings. They also have jasmine and chrysanthemum if you ask.

Come before 11 a.m. on weekends if you want the full spread. By noon the kitchen has run out of a few things and the turnover gets choppy. Weekday dim sum is available too, but the selection is smaller and the energy is different — quieter, more lunch-counter. The weekend version is the real one.

What makes Golden Dim Sum worth your time isn’t a single dish or a story you can put on Instagram. It’s the consistency. Chef Lin has been making the same dumplings the same way for years, and you can tell. In a city with a lot of dim sum options, that kind of steadiness is rare enough to be worth knowing about.
