Iowa State Fair vendors are pushing through the rain to prepare for opening day. Whatcha Smokin’? BBQ in Luther is preparing its signature brisket and a new food for the Iowa State Fair: Star Spangled Swine-pork belly served on a stick.
Vendors Prepare for Large Crowds
Des Moines Mayor Connie Boesen, who owns the Applishus stands, said her staff had already made 20,000 of the popular apple egg rolls before the fair. Workers scrambled Wednesday to protect the booths from the rain.
Jeremy Parsons, the Iowa State Fair’s CEO, said the rain caused problems but expressed confidence that the fair would be ready for opening day. “Weather before the fair, in some ways, is more difficult,” Parsons said. “Everyone is on a really tight timeline to get things set up properly ahead of Aug. 13, so the rain yesterday kind of delayed things.”
