Hamilton County health officials urge safe food practices for football tailgating season

With the kickoff of football season, Hamilton County Public Health is sounding the alarm on food safety for tailgating fans. Director of Environmental Health Jeremy Hessel warned that the typical tailgate environment can quickly become a breeding ground for harmful bacteria if food is not kept at safe temperatures.

Temperature guidelines to avoid the “danger zone”

Hessel explained that foods should never sit below 135°F or above 41°F. Once food enters that temperature range, it should be discarded after two hours to prevent bacterial growth. “If it gets in that danger zone, probably want to put that food away within two hours,” he said.

Common culprits and the illnesses they can cause

Undercooked meat, raw toppings such as onions, and items left out too long—like gravies, cheeses, and stews—can harbor pathogens. “You can get anything from E. coli, norovirus, anything where bacteria will grow,” Hessel cautioned.

Handwashing and proper disposal are key

Handwashing remains the most effective way to stop the spread of germs. After the gathering, Hessel advises fans to discard any leftovers that have been sitting out for three, four, or five hours, or longer. “Don’t risk it. Just make sure you throw that away, so you don’t get your family sick,” he said.

What to do if you suspect a problem

Fans who have concerns about the safety of food they are buying or serving can contact the Hamilton County Health Department for investigation. The department encourages the public to report any suspected violations promptly.

Practical tips for a safe tailgate

  • Keep hot foods hot and cold foods cold; use insulated containers or coolers with ice.
  • Serve food promptly and avoid leaving dishes out for more than two hours.
  • Wash hands with soap and water before handling food, after using the restroom, and after touching raw meat.
  • Use separate cutting boards and utensils for raw and cooked foods.
  • Discard any food that looks, smells, or tastes off.

By following these simple steps, fans can enjoy the excitement of football season without risking food‑borne illness. Hamilton County officials stress that vigilance now protects families later, keeping the tailgate tradition both fun and safe.
