Guru’s Is Gone, But El Gallo Giro Still Feeds the Crowd

The parking lot on State Street fills up fast on a Friday afternoon, and not because anyone’s being trendy about it. El Gallo Giro draws a crowd the old way — through the smell of carnitas fat rendering in a deep pan and the sound of a kitchen that doesn’t slow down between lunch and dinner.

The restaurant sits in a strip mall on South State Street, which is not a glamorous address, and nobody there seems to care. The dining room is bright and loud, with vinyl booths, a counter for ordering, and a TV usually tuned to soccer. Families come here with grandparents and toddlers in the same group. Construction crews park outside at noon. That mix tells you more about the food than any review could.

The menu is long and honest. Tacos run about $2.50 to $3.50 each — corn tortillas, a choice of meat, onion, and cilantro, with a cup of house salsa that has real heat if you want it. The al pastor is the standout: slightly charred at the edges, sweetened with pineapple, and not overloaded with seasoning trying to compensate for lesser pork. Order four and you’ll understand why people drive across town for them.

The birria is worth the extra attention. It arrives as a stew or as quesatacos — folded corn tortillas dipped in consommé before hitting the griddle, then filled with shredded beef and melted cheese. You dip the finished taco back into the broth. It’s messy, and it’s exactly what it should be. A full order with a side of rice and beans runs around $12 to $14, which in 2024 is a reasonable deal for something that takes that much effort to make.

For something lighter, the ceviche is sharper and more acidic than you’d expect from a landlocked state — fresh enough, lime-heavy, served with tostadas. The horchata is made in-house and sweetened properly, not watered down. Get it cold.

Service is counter-style, so you order at the register and they call your name. Weekday lunches are the most manageable; Friday and Saturday evenings can mean a short wait for a table. The staff is efficient without being rushed, and the kitchen moves quickly once orders are in.

What sets El Gallo Giro apart from the handful of other Mexican spots along this stretch of Provo isn’t one single thing — it’s the consistency. The food tastes the same on a Tuesday as it does on a Saturday. The tortillas are pressed fresh. The meats are rotated properly. These things sound basic, but they’re not guaranteed, and they’re the reason the regulars stay regular.

If you’re coming from BYU campus or downtown, it’s about a ten-minute drive south. Bring cash if you have it; they take cards, but cash moves faster at the counter. Go hungry and plan to order more than you think you need. You probably won’t leave anything on the plate.
