In a dining scene that rewards novelty almost reflexively, this kind of stubborn, confident simplicity is its own statement — and it is a delicious one.

East 6th Street has changed considerably in the past decade, and the changes keep coming. Gus’s doesn’t seem bothered. It just keeps frying chicken, and Austin keeps showing up. That is about as strong an endorsement as any restaurant can earn.
