Chicago’s frozen yogurt scene has undergone a transformation, with a shift towards tart Greek yogurt, premium toppings, and a health-conscious approach. Nova Froyo, a new shop in the West Loop, has already sold out every night in its first week, offering Greek frozen yogurt made from strained yogurt with a creamy texture and tangy flavor.
A New Generation of Frozen Yogurt
The latest generation of frozen yogurt has stripped away many of the additions of the past, such as self-serve machines and artificial flavorings. Instead, shops like Nova Froyo and Kala Modern Greek are focusing on high-quality, natural ingredients and unique flavor combinations. Nova Froyo’s founder, Ruby Patel, was inspired by a Greek frozen yogurt store in Madrid and wanted to bring a similar concept to Chicago.
Mikono, another new entry in the Chicago frozen yogurt scene, has also seen a surge in customers, with sold-out pop-ups and a growing following. Ema, a Mediterranean restaurant in River North, has been serving Greek frozen yogurt since 2016 and has seen an increase in demand, selling around 800 cups on a recent weekend.
A Health-Conscious Approach
The trend towards Greek frozen yogurt is driven in part by a growing interest in health and wellness. Greek yogurt has a higher protein content than traditional yogurt, making it a popular choice for those looking for a healthier dessert option. Nova Froyo’s frozen yogurt is made with fresh milk, sugar, and Greek yogurt, and is available in one flavor: original tart.
Kala Modern Greek offers a unique take on frozen yogurt, blending imported Greek yogurt with cream to create a dessert that retains some of the health benefits of Greek yogurt while delivering the indulgent texture of ice cream. The shop’s ‘fro-go’ has become a popular treat, with lines down the street after 8:30 p.m.
