You get the option to order the birria as a straight bowl with the broth ladled over the meat, or as quesabirria tacos — corn tortillas dipped in the cooking fat, griddled until they blister, filled with the shredded beef, and loaded with onion and cilantro. Then you dip the whole taco into the consommé on the side. That’s the move, and it’s messy in the best way.

If you’re going on a weekend, plan to arrive by 11 or accept a short wait. The dining room is small — maybe a dozen tables — and turns over at a steady pace, but Sunday service hits a stride around noon that can back things up. A couple of tacos with a cup of consommé runs you around $12 to $14, and a full bowl with rice and beans lands in the $13–$16 range. Nobody goes home hungry.

The menu is focused. There are a few other items — pozole on certain days, some additional antojitos — but birria is the reason people come and the reason they come back. Don’t overthink the order on your first visit. Get the quesabirria tacos, three if you’re hungry, and ask for extra consommé. The horchata is housemade and worth it over any canned drink from the cooler.

The service is family-run, friendly, and efficient without being rushed. Nobody is going to upsell you. If you need a recommendation, ask — they’ll tell you what to get without ceremony.

What makes this place worth including in any honest survey of Wylie’s food scene is simple: it does one thing with real focus, and it does it at a level that would hold up in any Dallas neighborhood known for serious Mexican cooking. The fact that it’s sitting off a suburban FM road in Collin County makes it slightly unexpected, but that’s the thing about Wylie these days — the demographics have shifted, the demand is real, and spots like this follow the community.
