Good Tex-Mex at the Edge of Town: Manny’s Deserves a Second Look

The parking lot at Railhead Smokehouse on U.S. 377 fills up before noon on Saturdays, which tells you most of what you need to know. This is not a place people stumble into. People drive here on purpose, often from thirty or forty miles out, because the brisket is the kind that requires no sauce and no explanation.

Railhead is part of a Fort Worth institution — the original on White Settlement Road has been feeding west-side Cowtown for decades — but the Granbury location stands on its own. It sits in a low-slung building just off the highway, past the car washes and the farm supply store, and the dining room smells exactly like it should: oak smoke and rendered fat and something faintly sweet from the pit.

The brisket is the anchor. Order it sliced, not chopped, and ask for a mix of lean and fatty if they’ll let you. The bark is dark and dry on the outside, and the interior is the kind of pink that takes twelve-plus hours to get right. A pound runs somewhere around fourteen to seventeen dollars depending on the day, and that’s enough for two people eating seriously. The ribs — pork spares — are worth the extra few dollars if they have them. They tend to run out by mid-afternoon, so earlier is better.

Sides are honest and unpretentious. The pinto beans have smoke flavor worked all the way through, not just floated on top. Coleslaw is creamy and cool, which is exactly what you want between bites of something that heavy. The jalapeño cheese grits show up occasionally as a special and are worth asking about. Skip the dinner rolls if you’re watching carbs; don’t skip them if you’re not.

The setup is counter service, tray and butcher paper, communal tables if it’s busy. There’s no tableside atmosphere to speak of, and that’s fine. This style of barbecue joint doesn’t need it. Families come in work clothes. Couples come in from the lake. Nobody is performing anything.

Pricing for a full meal — meat, two sides, a drink — lands around fifteen to twenty dollars a person, which puts it solidly in the range of serious barbecue that doesn’t require a special occasion. They take cards. They also have a drive-through, which is either convenient or slightly absurd depending on your feelings about eating brisket in your car.

One thing worth knowing: hours can vary, and they do close when the meat runs out. Calling ahead on a weekend afternoon is not a bad idea if you’re making the drive specifically. Wednesday and Thursday lunches tend to be calmer if you want a seat without waiting.

Granbury has plenty of places to eat on the square, and most of them are perfectly good. But Railhead is the kind of barbecue that earns its reputation by doing one thing over and over without cutting corners. The smoke ring on that brisket is a straight line of accountability. It’s either there or it isn’t, and at this place, it always is.
