There are restaurants you visit once and forget by the time you reach your car, and then there are the ones that quietly rearrange your standards for what a neighborhood dinner out can actually feel like. Cucina di Paolo, tucked into the Ten Mile corridor on the southwest side of Meridian, belongs firmly in the second category — and once you find it, you will wonder how it stayed off your radar for so long.

From the outside, the building is modest. A warm terracotta sign, a small patio strung with Edison bulbs, and a hand-painted menu board near the door that changes with the seasons. Step inside and the room opens up into something that feels genuinely transported: exposed brick, low pendant lighting, and the kind of background hum that signals a kitchen that is actually working rather than just warming things up. The staff move with intention, and the host will likely remember your name by the time you leave — which, in a city growing as fast as Meridian, is no small thing.

The menu reads like a love letter to central Italy, written by someone who actually went there and paid attention. House-made tagliatelle arrives with a wild boar ragù that has been simmering since morning, rich and dark with a depth that you simply cannot shortcut. The wood-roasted half chicken is dressed with preserved lemon and herbs from a small kitchen garden out back, and it arrives with a crispy skin that makes an argument for simplicity being its own form of ambition. Vegetarians are not an afterthought here either — a rotating seasonal risotto, recently featuring roasted butternut squash and sage brown butter, drew legitimate gasps from my dining companion.

What truly sets Cucina di Paolo apart in Meridian’s increasingly crowded dining scene is its commitment to a slower, more deliberate pace. This is not a place to rush through. The antipasto course deserves full attention — the whipped ricotta crostini with honey and crushed pistachios alone justifies the drive across town. The wine list is compact but thoughtful, leaning Italian with a few Pacific Northwest selections that complement the kitchen’s flavors rather than compete with them.

Dessert is non-negotiable. The tiramisu is the classic version, made properly with savoiardi soaked just long enough, and the panna cotta changes weekly. On my last visit it arrived with a blood orange compote that was, frankly, unreasonable in the best possible way.

Cucina di Paolo is open Tuesday through Sunday for dinner, with a popular Sunday brunch added in recent months. Reservations are strongly recommended on weekends, and a covered patio makes warm-weather dining an event in itself. This is Meridian dining at its most confident — rooted, generous, and worth every bit of the anticipation.
