Tom Mangieri Has Been Making Pizza in Arlington for 30 Years

My neighbor Debbie told me about Luca’s the way people tell you about their doctor — like she was doing me a personal favor and also maybe a little reluctant to share. “It’s not fancy,” she said. “But Tom knows what he’s doing, and he’s been doing it longer than most of these new places have existed.”

She wasn’t wrong on either count. Luca’s Pizza & Italian Kitchen sits on a stretch of Pioneer Parkway that doesn’t exactly beg you to stop — a low strip with a parking lot that fills up faster than you’d expect on a Friday night. Inside, it’s the kind of room where the lighting has never been updated and that somehow works in its favor: red-checked tablecloths, a few framed Italian landscapes, a counter up front where Tom himself is often standing, talking to someone he clearly knows well.

Tom Mangieri opened the place in the mid-1990s after cooking in a string of Italian kitchens around the Metroplex. He makes the dough fresh every morning — hand-tossed, not pressed — and the sauce is a simple San Marzano base he hasn’t fiddled with in years. “People ask me to change it,” he told me once when I made the mistake of suggesting a little more garlic. “I tell them to order something else.” He was smiling, but only a little.

The pizza is the reason to come, specifically the thin-crust with Italian sausage and roasted red peppers. It arrives slightly charred on the bottom — not burnt, but with that crispness you only get from a properly hot oven and someone paying attention. The crust at the edges puffs just enough to hold a little chew. I’ve been ordering the same thing for four years and I have no plans to stop.

That said, the chicken parmigiana is serious business. It comes out in a cast-iron skillet, which is unusual, and the breading stays crisp in a way that suggests it went straight from the fryer to the oven to your table with no sitting around. The pasta underneath — a simple marinara linguine — is cooked correctly, which sounds like faint praise but is not, because overcooked pasta seems to be the default setting at too many Italian places in this town.

Lunch is the quiet time to go if you want to actually talk to Tom. Dinner on weekends gets loud, and the wait on a Saturday can run thirty to forty minutes even if you call ahead. Worth it, but plan accordingly. The menu is cash-friendly — a large pizza runs around $18 to $22 depending on toppings, and the entrees top out around $16. You can bring your own wine; there’s no liquor license, and a bottle of something Italian feels right.

What keeps me coming back, beyond the food, is that Tom is still there almost every day. He’s in his late sixties now, gray at the temples, moves around the kitchen with the ease of someone who stopped rushing a long time ago. His daughter helps run the front of house. There’s nothing performative about any of it — no chalkboard specials written in clever fonts, no Instagram handle on the menu. Just a guy who decided to make good pizza in Arlington and has been doing it ever since.

Debbie was right. He knows what he’s doing.
