Tierra Verde’s Neighbor Does Barbecue Differently

People who live near the Stacy Road corridor have been pointing neighbors toward Wildfire for years, not because it gets written up much, but because it keeps delivering on a weeknight when a lot of places phone it in.

Wildfire sits in a low-slung shopping center off US-75 in Allen, the kind of address that wouldn’t stop anyone scrolling past it online. Walk in on a rainy Tuesday and the scene is a mix of office workers, couples, and a few solo diners at the bar — the sort of crowd that found the place on their own and kept coming back. The lighting is warm, the booths are comfortable without trying too hard, and the kitchen doesn’t seem to care that it’s a slow night.

The menu leans American with a wood-fire slant. The kitchen runs a live-fire grill, and it shows. The ribeye comes out with that particular crust that only happens when the heat is genuinely high and the beef has had a moment to rest. At around $42–$48 depending on the cut and market price, it’s not a casual Tuesday splurge for most people, but it’s also not trying to be a steakhouse occasion — the vibe is too relaxed for that.

What moves steadily on slower nights is the wood-grilled salmon and the half-rack of ribs. The ribs have a smoke ring that’s earned rather than painted on, and they don’t fall apart — which is a point of contention in barbecue circles, but Wildfire sides with the crowd that wants a little pull. The salmon gets a char on the skin side that holds up against a citrus butter finish without turning the plate cloying.

Starters are worth taking seriously. The shrimp and grits is thicker and more Southern than the rest of the menu would suggest, and it works. The wedge salad is exactly what it’s supposed to be — cold, sharp blue cheese, crispy bacon, no reinvention needed.

The bar program is straightforward: a solid whiskey list, wines by the glass that change occasionally, and bartenders who pour honest measures. A couple of old fashioneds and two entrees with a starter puts a tab somewhere in the $90–$120 range before tip, which is in line with what you’d expect for the quality of what arrives at the table.

On a weekend the dining room fills out, and the noise level climbs accordingly — not rowdy, but lively enough that a quiet conversation requires some leaning in. Tuesday and Wednesday evenings are measurably calmer. The service doesn’t slack off either way, which is rarer than it should be.

Wildfire isn’t trying to be the only restaurant in Allen anyone talks about. It’s been doing its thing in the same spot for years while louder concepts have come and gone around it. For the people who live nearby, that kind of consistency is the whole point.
