The name belongs to Michael Pearce, who goes by Slap. He spent years cooking competition barbecue before opening this spot in Overland Park in 2016 alongside his brother-in-law, Tim Sheehan. Competition pitmasters learn to be precise in ways that restaurant cooks sometimes aren’t — every brisket judged against a perfect standard, every bite evaluated cold by strangers. That discipline shows up in the finished product here. The brisket has the kind of bark and smoke ring that competition judges would nod at, but what matters more is that it tastes right: rendered fat, clean smoke, beef flavor that hasn’t been bullied out by over-seasoning.

Slap runs a tight menu by design. Brisket, pulled pork, burnt ends, ribs, turkey, sausage. Sides that do their job — the beans have depth, the slaw cuts through the fat the way it should. The burnt ends are a particular point of pride, and on days when they sell out by 12:30, regulars know it wasn’t an accident. The kitchen doesn’t make extra just to have them. When they’re gone, they’re gone.

The room itself is small and functional. Picnic-style seating, a cafeteria-style ordering line, paper trays. No tableside service, no cocktail program, no mood lighting. Lunch is the main event; the place closes mid-afternoon most days, which means if someone shows up at 2:00 expecting a full spread, they may leave disappointed. The hours are posted, but arriving by 11:30 on a weekend is the safer bet if the goal is a full tray of everything.

Prices are reasonable for the quality — a two-meat plate with two sides lands around twelve to fifteen dollars depending on the cuts, and the portions don’t feel stingy. Brisket by the pound is available for people who want to take it home and deal with it there.

What Slap and his crew have built here isn’t flashy, and it doesn’t need to be. There’s a particular kind of credibility that comes from a pitmaster who has sat at competition tables and won, and who then decided to bring that standard to a counter-service spot in Johnson County. The locals who’ve been coming since the early years know what they’re getting. First-timers sometimes look a little surprised — by the line, by the wait, by the way a brisket sandwich on a plain bun can be that satisfying.

Slap’s doesn’t try to be Kansas City’s flashiest barbecue story. It just keeps putting out the work, tray after tray, until the pits are empty.
