Eggington’s is on East 2nd Street, easy to find if you’re coming from downtown or heading toward Casper College. Street parking is generally available, and the neighborhood is quiet enough on weekend mornings that getting there isn’t a project.

What makes it stand out isn’t one spectacular dish or a concept — it’s consistency over a very long time. A lot of places promise a classic American breakfast and deliver something that tastes assembled from a box. Eggington’s actually cooks. The eggs taste like eggs, the toast comes out properly buttered, and the whole thing arrives while it’s still hot. In a city where breakfast options can be limited, that’s not a small thing.
