Organizers said the change reflects a broader effort to keep Fiesta‑related events sustainable and appealing to a new generation of attendees. The Conservation Society of San Antonio recently announced that the National Indian Oceanic Society of America (NIOSA) will not take place during the 2027 Fiesta season, citing declining attendance and financial challenges. In response, St. Mary’s is choosing to evolve the Oyster Bake rather than discontinue it.
