SHREVEPORT, La. – This week’s Courtney’s Kitchen focuses on an important part of healthy eating: Getting more fruits and vegetables into your daily routine. KTBS contributor and registered dietitian Courtney Butts says fruits and vegetables provide essential nutrients, including fiber, vitamins, minerals, and antioxidants that support overall health.
Healthy Eating Tips
One of the easiest ways to maximize those benefits is by ‘eating the rainbow,’ or choosing produce in a variety of colors. Most adults should aim for about 2 cups of fruit and 2½ cups of vegetables each day. Rather than trying to count every serving, fill about half of your plate with fruits and vegetables at most meals and gradually incorporate a wider range of colors throughout the week.
One strategy she recommends is batch-prepping roasted vegetables at the beginning of the week. Viewers with nutrition questions or ideas for future Courtney’s Kitchen segments can email [email protected] or [email protected].
