Raider Red Meats Hosts Texas State BBQ Championship at Texas Tech

West Texas barbecue fans have a new reason to gather on the Texas Tech campus this weekend. The Raider Red Meats Barbecue & Ribeye Championship returns Aug. 21‑22, bringing top pitmasters from across the region to the Commuter West parking lot outside the Department of Animal & Food Sciences building.

Prize Money and Competition Categories

Competitors will vie for a share of $15,000 in prize money across five categories: brisket, pork, ribs, ribeye steak and chicken. In addition, a separate collegiate division allows colleges, universities and student organizations to enter teams, giving young cooks a platform to showcase their skills.

Official State Championship

The event is sanctioned by the Kansas City Barbeque Society and carries the title of the official State Barbecue Championship of Texas. The grand champion not only earns bragging rights but also receives an invitation to compete at the American Royal World Series of Barbecue in October.

Friday Night Kickoff

Friday evening begins with a sponsor dinner and the “Raider Rumble,” an exhibition cook‑off featuring live music, entertainment and celebrity judges. The atmosphere is set for two full days of smoke, competition and community.

Saturday Workshop

Saturday’s schedule includes the “Backyard BBQ Boss” workshop led by Dale Woerner, Cargill Endowed Professor in Meat Science Sustainability. The session will explore the science and techniques behind championship‑caliber barbecue before the judges evaluate the entries.

Scholarship Mission

Beyond the food, the championship serves a larger purpose. Raider Red Meats director Tate Corliss notes that the event is the organization’s largest fundraiser, supporting scholarships for students in the Davis College of Agricultural Sciences and Natural Resources. Since opening in 1982, Raider Red Meats has provided hands‑on experience in meat processing, merchandising and business operations for Texas Tech students.

Texas Tech’s meat science program, dating back to 1933, includes the 14,000‑square‑foot Gordon W. Davis Meat Science Laboratory where students study animal handling, carcass evaluation, food safety and product development. The championship helps strengthen the link between the university, the livestock industry and barbecue enthusiasts while directly funding student scholarships.

Community Impact

The event highlights Lubbock’s vibrant barbecue culture and offers local families a weekend of entertainment, education and the chance to support future professionals in the meat industry. Trophies, brisket and spirited debates over rib techniques are expected, but the lasting legacy will be the scholarships earned by the next generation of agricultural leaders.
