Persimmon Earns Its Reputation One Quiet Plate at a Time

My friend Carla made me promise not to write about this place. She’s protective of her Tuesday night reservation and worried, correctly, that more people will want one. I’m writing about it anyway because Persimmon on Hope Street is genuinely one of the most satisfying restaurants I’ve been to in New England, and Providence doesn’t talk about it enough relative to what it delivers.

The room is small — maybe fourteen tables — on a stretch of Hope Street that’s busy without being loud. It doesn’t look like much from outside, which I think is partly intentional. Chef Champe Speidel has been cooking here since 2005, which in restaurant years is practically geological, and the place has the ease of somewhere that stopped trying to prove itself a long time ago. The service matches that: attentive without being theatrical, the kind where your water glass is full before you notice it wasn’t.

The menu changes often enough that I can’t tell you exactly what you’ll find, but I can tell you what the cooking does. It leans local and seasonal in a way that’s practical rather than performative — there’s no chalkboard manifesto about farms. You just notice that the vegetables have actual flavor, that the fish is clearly fresh, that things taste like what they’re supposed to taste like. On my last visit in early spring, there was a delicate rabbit terrine to start, followed by a duck breast with something involving rhubarb that had no business being as cohesive as it was. Desserts are not an afterthought here. Order one.

The wine list is short and well-chosen, skewing European without being precious about it. If you ask your server for a recommendation, they’ll actually give you one instead of reciting the list back at you. I had a glass of something orange and funky that I cannot remember the name of and have been thinking about since.

Prices are what you’d expect for this level of cooking: appetizers in the $16–$22 range, mains $30–$45, and worth it. This isn’t a weekly habit for most people, but it’s exactly the kind of place you take someone when you want the meal to be memorable without being exhausting. No theatrical tableside presentations, no foam for foam’s sake. Just very good food cooked carefully and plated with restraint.

Reservations are strongly recommended — OpenTable or by phone. The room fills up, especially on weekends, and it’s not a place with a bar where you can comfortably wait. Go on a weeknight if you can. There’s something especially nice about eating there when the city isn’t rushing around you.

Hope Street has a lot going for it — good coffee, good hardware stores, a farmers market on weekends when the weather cooperates — but Persimmon is the reason I’ve driven past my own neighborhood to end up there on a random Wednesday evening. Some restaurants coast on reputation. This one keeps re-earning it, quietly, plate by plate.
