Mixtli: San Antonio’s Michelin Star

Mixtli, a San Antonio restaurant, has earned a Michelin star for its unique and delicious Mexican cuisine. The restaurant, founded by chefs Diego Galicia and Rico Torres, offers a 10-course tasting menu that takes guests on a journey through the coasts and cultures of Mexico.

A Culinary Journey

The menu is a dance of culinary choreography, with each course carefully crafted to showcase the flavors and ingredients of Mexico. From the Spanish Mayan pork belly dish to the green plantain tamal, every bite is a testament to the chefs’ creativity and skill.

The restaurant’s beverage director, Lauren Beckman, also creates art in a glass with her layered notes and color. One cocktail, The Outer Harbor, blends passionfruit and pineapple with tomato gin, carpano blanco, and caper berry soda.

A Dream Realized

Mixtli was born in a renovated boxcar, with Galicia and Torres investing $15,000 and maxing out their credit cards. The first iteration of their dream opened in 2013 with one 12-seat table, and the chefs used shoe leather and social media to attract guests.

Today, Mixtli is a James Beard finalist for Outstanding Restaurant in 2026, and its success is a testament to the chefs’ hard work and dedication. As Galicia said, ‘We were writing the script as we went,’ and their story is one of passion, creativity, and perseverance.
