Minimum Design, Maximum Noodle at Tei-An

Tei-An is a Japanese soba restaurant on the top floor of One Arts Plaza, and it has been quietly making people rethink what a bowl of noodles can cost and why they’re glad they paid it.

Let’s get the location out of the way. One Arts Plaza sits at the edge of the Arts District, the kind of building that feels like it was designed to house a law firm or a wealth management company. The elevator ride up feels incongruous until the doors open and the room straightens everything out. It’s spare and deliberate — dark wood, clean sightlines, a long bar, natural light handled without drama. On a rainy Tuesday afternoon, with maybe eight other people in the room, it’s about as calm as Dallas gets.

The soba here is made in-house daily by chef Teiichi Sakurai, who has been doing this in Dallas since 2008. That detail matters more than it sounds. Most soba in the United States is dried and packaged, which produces a decent noodle but not a particularly interesting one. Fresh soba buckwheat has a nuttiness to it, a slight resistance, and a tendency to absorb whatever broth you’ve put it in rather than just floating on top of it. It’s a genuinely different thing to eat.

The menu is short and doesn’t apologize for it. At lunch, the most sensible move is one of the cold soba sets — you get noodles served over ice with a dipping broth on the side, some tempura, and a few quiet accompaniments. The zaru soba is the stripped-down version, which is usually where you want to start. Dip, eat, drink the leftover broth cut with hot water at the end. It’s a whole ritual and nobody rushes you through it.

Dinner opens the menu up considerably: there’s duck, there’s a pork belly dish that gets ordered at nearly every table, there’s an omakase option that runs north of $100 per person if you want to hand the wheel over entirely. The sake list is long and annotated in a way that actually helps rather than just impresses.

Pricing is not casual. Lunch sets run $22–$35, dinner entrées higher. This is not a complaint, just useful information. The portion logic is Japanese, meaning the food is complete rather than abundant. If your baseline is an Olive Garden bowl of pasta, recalibrate before you go.

Saturday mornings have a particular rhythm to them here — the room fills slowly, people linger, and the staff doesn’t perform urgency. The Arts District on a weekend morning has almost no foot traffic, so parking is easy and the walk from the garage to the front door doesn’t require negotiating around anyone. If you’re the kind of person who considers that a reasonable criterion for where to eat, Tei-An will reward you.

What makes it stand out, ultimately, isn’t the pedigree or the design or the accolades it’s collected over the years. It’s that someone in Dallas decided to do one very specific thing as well as it can be done, and then kept doing it for sixteen years without drifting toward what’s easier or more popular. That kind of stubbornness tends to age well.
