The advice given is specific: high heat, butter, two minutes a side, don’t crowd the pan. Nobody is performing. Nobody is selling an experience. This is a neighborhood seafood counter where people buy fish, and it operates with a matter-of-fact competence that’s hard to find in a city that increasingly caters to visitors.

For travelers, the practical case for 10th & M is straightforward. The shop closes by early evening most days — hours vary by season, so calling ahead or checking before arriving is worth the thirty seconds. It’s not a late-night destination. It is, however, the kind of place that reminds a visitor what Alaska actually produces, and how different that is from what most of the country understands seafood to be.

Outside, the October wind off Cook Inlet moves down the street and the parking lot holds a half-dozen pickup trucks. Inside, the woman in rubber boots is wrapping another fillet. A chest freezer hums. The halibut cheeks are going home with the man in the Carhartt jacket, and everyone involved seems satisfied with that arrangement.
