Old Ellicott City will welcome a new family‑run restaurant on Tiber Alley off Main Street when Hot Garbage Pizza opens its doors in early September. Chef‑owner Geoff Gill, a native of an Italian‑heritage family, previewed two of his handcrafted pies at the Old Ellicott City Farmers Market on Saturday.
Concept rooted in family tradition
Gill says the restaurant honors his late grandmother, who hosted regular pizza nights and inspired his love of cooking. One of the featured pies, dubbed the “garbage” pizza, combines the week’s leftover ingredients into a single, flavorful creation. The menu will initially feature five pizza varieties and a selection of beverages.
Local farms at the heart of the menu
At the market, Gill sourced mushrooms and eggs from Manchester Mushroom Farm and Italian sausage and bacon ends from North Acres Farm for his white and breakfast pizzas. He emphasized the importance of knowing where ingredients come from and supporting nearby growers.
Community and job creation
Gill, a father of several children, highlighted his desire to provide first‑job opportunities for local youth, teaching them culinary skills that can serve them in any future career. “I love feeding my family and working with the community,” he said.
Self‑funded and ready for service
Hot Garbage Pizza is fully self‑funded, with no outside investors or restaurant group partners. The establishment holds a full liquor license and a carry‑out license, allowing patrons to purchase wine or a six‑pack with their pizza.
Location and next steps
The restaurant will be located at 8069 Tiber Alley, Ellicott City, MD. Director of the OEC Farmers Market, Kristin Vergis, expressed excitement about the new addition, noting its commitment to local sourcing and community spirit.
