Hiro, who hails from Niigata, Japan, brings a wealth of experience from Michelin-starred kitchens in New York and Tokyo. His culinary journey began in Tokyo, where he worked in various international cuisines before focusing on Japanese techniques. Nami, who studied music in Tokyo and performed traditional Japanese drama in New York, complements Hiro’s expertise with her knowledge as a certified sake sommelier.

The couple’s move to Fort Worth was facilitated by Liz and Stephen Mears, owners of The Holly, who discovered the Ochiais’ talent during a pop-up event in Dallas. The new restaurant will feature an L-shaped counter, allowing guests to watch the chefs at work, and will offer both guided omakase courses and individual ordering options.
