A surge in cases of diarrhea caused by the parasite cyclospora has been reported, with over 7,000 cases confirmed or under investigation in 34 states since May 1. The outbreak is particularly severe in Michigan and Ohio, with over 3,000 cases reported.
What to Eat and What to Avoid
Experts recommend avoiding precut or packaged lettuce and greens, and instead selecting whole, uncut produce. They also advise against eating fruits and vegetables that may be bruised, damaged, or moldy.
Cooking food to an internal temperature of 158 degrees Fahrenheit or higher can kill the cyclospora parasite. It is also essential to practice good hygiene in food preparation areas, including hand washing and keeping work surfaces clean.
People with weakened immune systems, such as young children, elderly individuals, and immunosuppressed people, are at higher risk of severe disease. However, for most healthy people, the disease is often mild.
