Conejos Tex-Mex Cantina Expands with Unique Regional Flavors

Conejos Tex-Mex Cantina, located in Leander, Texas, is making waves with its innovative approach to Tex-Mex cuisine. The restaurant, co-owned by Hernandez and the Morcher family, aims to offer both familiar and unique dishes that challenge traditional Tex-Mex expectations.

Chef Eduardo Miguel, who is set to join the ownership group with the opening of two new locations, is known for his creative specials like duck empanadas and pork chop tomahawks. Hernandez emphasizes that Conejos focuses on fresh, never frozen ingredients, allowing the natural flavors of the proteins to shine through without being overwhelmed by heavy sauces or excessive cheese.

Team Rabbit’s Expansion Plans

The ownership group, affectionately known as ‘Team Rabbit,’ includes Hernandez and Matt and Sandra Morcher. They have previously launched successful ventures such as the Lucky Rabbit bar and Rabbit Hole bar locations. With the success of Conejos in Leander, they are now planning to open two new locations in Round Rock and Cedar Park, aiming for a summer and fall opening, respectively.

Hernandez notes that maintaining consistency across all locations is a priority, ensuring that customers receive the same quality of food and service. The team is committed to creating a lively and enjoyable dining experience, inviting patrons to ‘have fun, come into our restaurant and have a good time.’

Commitment to Quality and Community

Conejos Tex-Mex Cantina not only brings a fresh culinary experience to the community but also embodies the values of hard work and dedication. Chef Miguel’s involvement in the ownership group is a testament to the importance of having someone who ‘puts the love and time into each dish,’ according to Hernandez.

As Conejos expands, it continues to be a vibrant part of the local dining scene, offering residents and visitors alike a taste of innovative Tex-Mex cuisine.
