Clyde Cooper’s BBQ Has Been Here Since Before You Were Born

Clyde Cooper’s Barbeque opened in 1938, which means it was serving chopped pork to hungry Raleigh workers before most of downtown’s current buildings existed. That’s not a marketing angle. That’s just a fact about a cinderblock room on Davie Street that has, somehow, outlasted three generations of trendier neighbors.

The current owner, Randy Hensley, didn’t inherit the place — he bought it in 1992 from the Cooper family, which is either a bold move or a slightly reckless one, depending on how you feel about taking on an institution. He’s the guy you’ll see most mornings getting things started, and he’s the kind of person who will tell you exactly what’s in the sauce and then make it clear that knowing doesn’t really help you. It’s Eastern North Carolina vinegar-based, tart and thin, the kind that divides people along geographic lines the way nothing else in this state quite does.

The dining room seats maybe fifty people on a good day, with formica tables and fluorescent lighting that has never once tried to be atmospheric. There are wood-paneled walls. There is no cocktail program. The menu is not seasonal. None of this is an accident — it’s the result of someone who figured out decades ago what they were doing and decided not to stop.

You order at the counter. The chopped barbecue plate comes with coleslaw and hush puppies, and the hush puppies are the sleeper here — denser than you expect, a little sweet, the kind of thing you eat three of before the plate arrives and then regret when there’s no room for the fourth. The Brunswick stew is worth getting in the colder months: thick, slightly smoky, the kind of thing that has no business being as good as it is in a place that doesn’t take reservations or have a website worth visiting.

Lunch is the move. They open at 10 a.m. on weekdays, close when things run out, and by 1:30 on a Friday the line of county courthouse workers and old-timers and the occasional confused tourist can stretch to the door. Prices are reasonable in a way that feels almost defiant — a plate with two sides is under twelve dollars, and nobody’s explained to them yet that they could charge more.

There’s a parking lot around back, which matters in this part of downtown more than you’d think.

Randy is not someone who does press junkets or Instagram live sessions or whatever the current version of that is. He’s someone who shows up and makes barbecue the same way it’s been made here for eighty-some years, and he seems to find the whole idea that this requires explanation slightly puzzling. Once, when someone asked him what the secret was, he reportedly said something to the effect of: cook it slow, don’t overthink the sauce, open the door in the morning.

Clyde Cooper’s is not for everyone, and it knows this. If you want mood lighting or a curated playlist or a menu that changes with the moon, there are forty other places within six blocks that will be happy to accommodate you. If you want to eat very good Eastern-style barbecue at a table with a paper napkin dispenser, this is your place — and it has been for longer than any of us have been around to need it.
