Cajian, a new Cajun and Creole counter-service restaurant, is set to open in downtown Tuscaloosa on University Boulevard. The restaurant is a collaborative effort between restaurateur Pete Zimmer and Paige Blankley, a New Orleans-born Cajun food truck operator.

The restaurant’s tagline, ‘Cajun, Creole, twisted,’ reflects its goal of innovating on traditional dishes while maintaining their authentic flavors. The menu features a wide range of options, including four different étouffées, two gumbos, po’boys, and debris fries.
The restaurant aims to provide quick and affordable meals, with a goal of serving customers within 15 to 20 minutes. The kitchen uses batch cooking to prepare large quantities of gumbo, étouffée, and other dishes, which are then served over rice with Cajun garlic bread on the side.
Cajian will also offer vegetarian and low-carb options, as well as loaded teas sourced from a Louisiana company. Alcoholic beverages will be available soon, including flavored daiquiris, a ‘Lil’ Boozie’ King Cake spiked milkshake, and a selection of beers and wine.
The restaurant’s space has been renovated to reflect a New Orleans-inspired atmosphere, with purple, green, and crimson walls, vintage Mardi Gras posters, and Frenchmen Street Festival prints.
