Broders’ Pasta Bar Still Earns the Wait on 50th Street

On a Wednesday in October, the line outside Broders’ Pasta Bar on 50th Street runs past the front window and toward the sidewalk. It is not a special occasion. There is no event. This is just what happens when a neighborhood Italian spot has been doing things right for thirty-plus years and refuses to take reservations.

Broders’ sits at the corner of 50th and Penn in the Fulton neighborhood, a few blocks south of Linden Hills, in the kind of residential pocket where people actually walk to dinner. The building is small, the tables are close, and the room fills fast. The no-reservation policy is either charming or maddening depending on your personality type, but the wait — typically 20 to 45 minutes on weeknights, longer on weekends — moves through a covered outdoor area where you can at least hold a glass of wine and feel like you planned this on purpose.

The menu changes seasonally and is printed on a single sheet, which is the right amount of choices. Pasta is made in-house, and you can tell. The pappardelle with wild boar ragù shows up regularly and is worth ordering without thinking too hard about it — the noodles have actual chew, the sauce is long-cooked and a little smoky. The gnocchi, when it’s on, is lighter than you’d expect and comes in preparations that don’t lean on cream as a crutch. Risotto appears occasionally and is properly labor-intensive, the kind that arrives still moving slightly in the bowl.

Starters are worth slowing down for. The burrata, when sourced well, is straightforward in a way that shows confidence rather than laziness. The roasted beet salad — a dish that has become cliché in roughly a thousand other hands — gets calibrated here with enough acid and enough bitter green to stay interesting. Bread service is not an afterthought.

Wine is Italian-focused and reasonably priced for a sit-down room of this caliber. You won’t find anything too obscure or too trendy; the list is built for drinking with food rather than discussing afterward. A bottle in the $40–55 range covers most of the room on a given night.

Dinner for two with a shared starter, two pasta mains, and a bottle of wine runs somewhere between $90 and $120 before tip — not cheap, but not surprising for the quality. This is not a special-occasion-only place, which is probably why people treat it like one anyway.

What keeps Broders’ Pasta Bar relevant after three decades isn’t novelty. It’s the consistent execution of a focused idea: pasta, made well, served in a room where the cooking gets most of the attention. The staff is brisk without being cold. The noise level is convivial without becoming a problem. The portions are honest.

The Fulton neighborhood doesn’t attract a lot of destination dining traffic, and Broders’ has never seemed to need it. The regulars come back, they bring people from out of town, and those people understand within about fifteen minutes why the line forms before the doors open. Go early, or resign yourself to the wait and bring someone you don’t mind talking to for half an hour on a sidewalk in Minnesota.
