Greenville’s food scene is about to get a fresh addition. Three seasoned food‑industry veterans—Nick Petracca, Shane Taylor and baker Ben Snyder—are preparing to open Bagel City, a dedicated bagel shop that will also serve as the commissary kitchen for the growing Augusta Street Market brand. The new location will occupy the 2445 Laurens Road site, the same property where the market’s pop‑up events have already drawn enthusiastic crowds.
Who’s behind the concept
Petracca and Taylor are the founding partners of Augusta Street Market, a community‑focused market that emphasizes locally sourced ingredients and simple, high‑quality fare. Snyder, who joined the team as a baker in early 2025, spent the past year perfecting a bagel recipe that launched last fall and now forms the foundation for the new concept.
“There’s one thing I do know and that’s what a sandwich should be like, what pizza should be like, and what a bagel should be like,” Petracca explained. “Ben can tell you why a bread or dough is behaving a certain way, and I know what the desired product is. I don’t know how to get there. Ben knows how to get there.”
Simple menu, big flavor
Bagel City will keep its menu straightforward, offering five to six varieties of bagels with one or two seasonal options. Customers can choose from six to eight spreads, including classic butter, peanut butter, and a unique tofu spread that mimics the texture of cream cheese while delivering a neutral flavor. The tofu spread pairs especially well with scallions, according to Snyder.
The sandwich lineup will be concise: a classic lox and bagel, a vegetarian option, and a rotating specialty sandwich that will change with the seasons. “One of the best parts is seeing people’s reaction to fresh bagels coming straight out of the oven,” Snyder said. “The pop‑ups have shown us that the community is excited for this.”
Why a commissary kitchen?
Beyond serving customers directly, Bagel City will function as a production hub for Augusta Street Market’s other locations, including a second market slated to open in Clemson. By centralizing baking operations, the team can ensure consistent quality across all venues while keeping costs manageable.
“We liked the idea of a purposefully simple concept that also lets us relocate the bakery to feed our other sites,” Petracca noted. “It gives us flexibility and supports the broader growth of the brand.”
Stay connected
Bagel City will keep the community updated on flavor testing, new menu items, and opening dates through its Instagram account @eatbagelcity. The team encourages Greenville residents to follow along and share feedback as the concept moves from pop‑up to permanent storefront.
With a focus on quality, simplicity, and community, Bagel City aims to become a staple for breakfast lovers and sandwich seekers alike. The anticipated December opening promises fresh, hand‑crafted bagels that reflect the culinary spirit of Greenville’s growing downtown food scene.
