Arlington’s Món Việt Cafe Thrives on Grandmother’s Vietnamese Recipes

In the heart of Arlington’s Bến Thành Plaza, Món Việt Cafe serves more than just pho and bánh mì—it serves a legacy. The restaurant’s modern, wood‑accented dining room is filled with the aromas of broth simmered in stone bowls, a tribute to the 200‑plus recipes memorized by Kimem “Mama” Duong, the family’s beloved grandmother.

From a Family Dream to a Local Staple

In 2016, the five Phan sisters opened the café as one of the first businesses in the newly built shopping center on East Pioneer Parkway. Their goal was simple: preserve the culinary heritage their mother, aunts, and grandmother had cultivated in Long Xuyên, Vietnam, and share it with the growing Tarrant County community.

Manager Bảo Anh Phan arrived in the United States that same year at age 15. She started by wiping utensils, cutting vegetables, and toasting bread in the kitchen’s heat. Though she did not know how to cook, watching satisfied customers sparked a determination to learn. After studying culinary arts at Dallas College, Phan was given a year to prove herself as the family’s next culinary leader.

Balancing Tradition and Local Tastes

“I did not want to ruin what my grandmother, aunts and mother had built,” Phan said, recalling the pressure of her first year. She added that the stress gave her “a lot of gray hair,” but the effort paid off. Last year the café posted record‑breaking sales, a milestone Phan attributes to modest adjustments that respect the original recipes.

Those adjustments include increasing portion sizes and tempering the naturally sweet flavors of southern Vietnamese dishes to better suit Texan palates. Phan also created a new house sauce—a salty‑sweet blend—for the signature bò né, a sizzling steak and eggs dish served with bánh mì, house‑made pâté, and butter. The sauce replaces the traditional salty soy sauce, enhancing the beef without abandoning the dish’s roots.

A Day in the Life of a Family Restaurateur

Phan’s workday begins before sunrise, timed around the needs of her six‑month‑old son. After feeding and changing the baby, she arrives at the café around 7:40 a.m., prepares the kitchen, and opens the doors at 8:30 a.m. She spends the morning at the bò né station, then moves on to mixing stir‑fry and fish sauces for rice dishes. The kitchen staff joins at 10 a.m., and the café closes its doors at 8 p.m. After a full day, Phan returns home to care for her child, embodying the family‑first ethos she serves to her patrons.

Family Values at the Table

When asked about the importance of “family,” Phan emphasized that the concept extends beyond blood ties. “My dream is for the entire family to sit down and eat together every day,” she said. She notes that many students in the area are far from home and crave the comfort of a shared meal. The café staff greets each guest with simple, caring questions—“How are you today? Did you work today? What would you like to eat?”—offering a moment of encouragement after a long workday.

Through the dedication of Phan and her relatives, Món Việt Cafe remains a place where tradition, faith, and the promise of a strong family unit intersect with the everyday lives of Arlington residents.
