Noodles, Broth, and No Shortcuts at Kagura Ramen

People in Thousand Oaks have opinions about ramen, and most of them have cycled through the usual suspects on Moorpark Road. Kagura tends to come up eventually — usually from someone who sounds mildly annoyed that it took them this long to find it.

The place sits in a small strip center off Lynn Road, easy to miss if you’re not looking. No marquee signage, no line snaking out the door on a Tuesday. Inside, it’s compact — maybe a dozen tables, counter seating, wood tones kept simple. The kind of room that tells you the food is the whole point.

The broth is the thing to pay attention to. Kagura does a tonkotsu that’s been simmered down to something dense and deeply savory — not aggressively salty, but rich in a way that coats the back of your throat. The shoyu option is lighter and cleaner, worth ordering if you want to taste the noodles as much as the broth. Those noodles, by the way, have actual texture — springy, with enough resistance that they don’t turn to mush halfway through the bowl.

For toppings, the chashu pork is the right call. It’s braised low and slow, sliced thin, and placed on top like it means business. The soft-boiled marinated egg — ajitsuke tamago — is exactly what it should be: jammy yolk, savory white, the kind of thing you eat first so you don’t forget about it. Add a sheet of nori and some green onions, and there’s really nothing missing.

They also keep a short list of small plates: gyoza that are pan-fried to a solid crisp on the bottom, karaage chicken that’s juicy and hot and disappears fast. If you’re going with two people, get both. If you’re going alone, get the gyoza and don’t negotiate with yourself about it.

Pricing is fair for what you get — most bowls land between $15 and $18, small plates in the $7–$10 range. That’s not cheap, but it’s not a shortcut ramen either. You can tell the difference.

Lunch service runs from about 11:30 to 2:30, dinner starts around 5. The weekday lunch window is your best bet for a quick in-and-out. Friday evenings pick up, and weekend dinner can mean a short wait. It’s worth it, but if you’re the type who plans around parking and pacing, go early or go on a Wednesday.

One practical note: they sometimes run out of certain items by late evening — the braised pork belly special in particular tends to disappear. Worth calling ahead or arriving by 6:30 if there’s something specific you have your eye on.

Kagura doesn’t advertise much and doesn’t need to. The regulars come back because the broth is consistent, the noodles are right, and nobody’s trying to jazz it up with novelty toppings or a cocktail program. It’s a ramen shop doing ramen, and that’s the whole pitch.
