Where Every Plate Tells a Story: Dining at The Open Range in Granbury

There are restaurants that feed you, and then there are restaurants that transport you. The Open Range, tucked just off the historic square in Granbury, Texas, firmly belongs to the second category. From the moment you pull open the heavy wooden door and breathe in the mingled scent of mesquite smoke and warm bread, you already know this is going to be a meal worth remembering.

The Open Range has built a loyal following among locals and weekend visitors alike, and once you settle into one of their sturdy, leather-cushioned chairs and take in the exposed brick walls, longhorn mounts, and soft amber lighting, it becomes obvious why. The space strikes that rare balance between rugged Texas character and genuine refinement — comfortable enough that you might linger two hours over dinner, elevated enough that it feels like a proper occasion even on a Tuesday night.

The menu leans into the Texas Hill Country tradition of doing a few things exceptionally well rather than trying to please everyone. The centerpiece is, predictably and gloriously, beef. The ribeye here is a thick-cut, dry-aged affair, finished with a compound butter that melts into every crevice the moment it hits the plate. Order it medium-rare, trust the kitchen, and don’t apologize for enjoying every bite. If you’re not in a steak mood — and this is perhaps the one scenario where that choice makes sense — the pan-seared gulf redfish with a jalapeño cream sauce is a genuine revelation, light and bright and laced with just enough heat to remind you this is Texas.

Starters deserve real attention here. The queso fundido with house-made chorizo is the kind of thing you’ll find yourself thinking about on the drive home, and the wedge salad arrives dressed with blue cheese made locally, piled with candied pecans and thick-cut bacon that tastes like it came from someone’s smokehouse. It did not, technically, but it tastes that way, and that matters.

The wine list skews toward Texas bottles, with a handful of California and international selections for those who prefer them. The bar program is equally thoughtful — the smoked old fashioned, prepared tableside, is a small bit of theater that never feels gimmicky, mostly because the drink itself is excellent.

Service at The Open Range is the kind that feels effortless precisely because the staff has worked to make it so. Questions get answered without condescension, timing is attentive without being rushed, and there’s a warmth here that no amount of training can manufacture — it has to come from people who genuinely enjoy their work.

If you’re making the drive to Granbury for a weekend getaway — and you absolutely should — make a reservation at The Open Range before you leave home. It books up on Friday and Saturday evenings, especially during the warmer months when the patio fills with couples and families taking full advantage of the North Texas sunset. You’ll want a seat. Plan accordingly, and then enjoy every unhurried minute of it.
