Smoky Jon’s #1 BBQ Has Exactly One Agenda

What do you do on a Tuesday afternoon in Madison when you want something that took all morning to make? You drive out to Packers Avenue, past the car dealerships and the tire shops, and you pull into the gravel lot at Smoky Jon’s #1 BBQ, where the smoke has probably been going since before you woke up.

The question newcomers always ask is some version of: is it actually good, or is it just the only BBQ place people know about? Fair question. Madison is not Memphis. Madison is not Kansas City. Madison is a university town that gets genuinely excited about ramen and farm-to-table grain bowls, which is fine, but it does occasionally make you wonder if the barbecue scene is running on low expectations.

Smoky Jon’s is not running on low expectations. It has been on Packers Avenue since 1981, and it has won enough regional and national competition awards that there’s a wall dedicated to the plaques. Jon Olson — the actual Jon — built the place around a wood smoker and a fairly simple philosophy: low heat, real wood, no shortcuts. The brisket goes on early. It comes off when it’s ready. This is not a complicated ideology, but it requires patience that a lot of operations eventually talk themselves out of.

Order the brisket if it’s available, and it usually is. The bark is properly dark, the fat has had time to render, and the interior stays moist without being greasy. The ribs run close behind — they pull clean from the bone without falling apart, which is the distinction that separates smoked ribs from braised ones masquerading as barbecue. The pulled pork is good; the chicken, solid. Sides are workmanlike: coleslaw, beans, potato salad. Nobody is coming for the potato salad, but it won’t embarrass anyone either.

The room itself is casual in the way that a place that’s been open for over forty years tends to get casual. Picnic tables, paper towels on the tables, a counter where you order and pick up. It seats maybe forty people comfortably. At lunch on a weekday it fills up with a mix of construction workers, UW staff, and the occasional out-of-towner who found it on a list somewhere and is quietly pleased they made the drive. Weekend afternoons can get busy; show up at 11:30 and you’re fine.

Prices are reasonable for what you’re getting. A two-meat plate with two sides runs around fourteen to sixteen dollars depending on the cut. Family packs are available if you’re feeding a group and don’t want to do math at the counter. They also do catering, which explains some of the larger equipment visible out back.

The location is not scenic. Packers Avenue does not photograph well. There’s no patio with string lights, no craft cocktail list, no weekend brunch. What there is: a parking lot, a smoker that’s been running since the Reagan administration, and food that is genuinely difficult to argue with. Madison has plenty of places trying hard to be interesting. Smoky Jon’s has apparently decided that interesting is optional and quality is not. Forty-plus years of a full parking lot suggests that’s a defensible position.
