The al pastor is the anchor of the menu, and justifiably so. Pork shoulder is marinated in a blend of dried chiles and achiote, then slow-cooked until it yields easily and carries deep, slightly smoky flavor. It arrives topped with pineapple, white onion, and cilantro — the classic combination — and it tastes exactly as good as it should. The carne asada is grilled to order and has the kind of char and seasoning that reminds you this is not an afterthought. The space itself is casual and convivial, with tile work, warm lighting, and the kind of comfortable noise level that allows conversation without requiring you to shout across the table. It draws a neighborhood crowd on weeknights and fills up on weekends, so arriving before seven on a Friday is a reasonable strategy. There is seating at the bar for solo diners, which is an underrated option — the bartenders know their mezcal and are happy to talk you through a pour.

Bucktown is an easy neighborhood to spend an evening in. Dos Santos sits within walking distance of several good bars and coffee shops, so consider making a night of it rather than rushing out the door after your last taco.
