Red Dirt Roots and West Texas Pours: A Night at McPherson Cellars

There is a moment, somewhere around your second glass of wine and your third scan of the horizon, when Lubbock stops being a punchline about flat land and starts being something quietly magnificent. That moment, for me, happened on the rooftop of the Cotton Court Hotel, perched above the Depot District with the sun bleeding orange and purple across the West Texas sky and the whole city sprawling out beneath me like a well-kept secret that finally decided to introduce itself.

The Cotton Court Hotel sits right in the heart of Lubbock’s Depot District, which has become the city’s most energetic neighborhood over the past decade. The building itself is a beautifully renovated historic cotton warehouse — all warm brick, clean lines, and that particular kind of character that only comes from something genuinely old being treated with genuine care. The rooftop bar sits on top of it all, and from up there you get an unobstructed, 360-degree view of the Llano Estacado that no postcard has ever quite managed to do justice.

The bar program here is thoughtful without being pretentious. The cocktail list leans into regional identity — you will find drinks built around local spirits, Texas whiskeys, and the kind of seasonal ingredients that tell you someone in the kitchen is actually paying attention. The wine list tips its hat to the surrounding wine country, which is more robust than most outsiders expect. The Texas High Plains AVA produces some genuinely excellent grapes, and the Cotton Court rooftop is a fine place to work your way through a few of them while the evening cools down around you.

What sets this spot apart from other rooftop bars is the atmosphere. There is no aggressive thumping music, no velvet rope theater, no performative exclusivity. People come here in boots and blazers, in jeans and sundresses, in everything in between. You might end up next to a table of Texas Tech professors decompressing after a long week, or a couple celebrating an anniversary, or a group of out-of-towners who stumbled in from a conference and are now reconsidering every assumption they had about Lubbock. That last category is my favorite.

The food menu is approachable and well-executed — shareable plates designed for exactly the kind of slow, unhurried evening the setting demands. Order something, split it, order something else. Nobody is rushing you anywhere.

Come on a Friday evening if you can manage it. Get there before sunset, claim a spot along the railing, and watch the light change over the caprock. The West Texas sky does things at dusk that feel almost theatrical — big color, big silence, big sky. From up here, with a cold drink in hand and the whole flat horizon doing its best work, Lubbock feels like exactly the kind of place worth writing home about.

The Cotton Court rooftop is not the flashiest thing in town, but it might be the most Lubbock thing in town — unpretentious, genuine, and a whole lot better than you were expecting.
