Overland Park welcomed a fresh culinary concept this weekend as Pho & Boil opened its doors on Shawnee Mission Parkway. Housed in the former Smoke Town BBQ space, the eatery combines traditional Vietnamese noodle soup with hearty Cajun seafood boils, a pairing not yet seen in the Kansas City metro area.
Menu Highlights
While the restaurant is still rolling out its full menu, early patrons can already enjoy classic pho alongside a variety of seafood boils. Diners may choose from boiled shrimp, snow crab legs, or crawfish, either individually or in mixed combos. One signature dish, banh canh cua, merges the two culinary worlds with a thick crab and seafood noodle soup.
Beyond the seafood offerings, the menu features “shaking” beef plates, fried rice, and house‑made boba tea sweetened with fresh juice and sugar from an on‑site sugarcane press. Owner Ken Pham explains the inspiration: “The Cajun food is a little salty and spicy, and that’s how we came up with boba tea — because of the sweetness. I think that’s a good combination.”
Local Roots and Family History
Pham’s connection to both cuisines runs deep. His family operated a Vietnamese restaurant in Texas for several generations before he relocated to the Kansas City area. Growing up, he also spent time with relatives in New Orleans, absorbing the bold flavors of Cajun cooking. “I don’t think there’s any fusion like this in the Kansas City metro,” Pham said, noting the decision to combine the two traditions under one roof.
Inside the restaurant, a large graphic traces the history of pho from its early 1900s origins in Vietnam to its spread across the globe in the 1970s, giving diners a visual backdrop to their meals.
Community Response
Early customers have responded with enthusiasm, many returning for a second plate after finishing their first. Pham says the feedback is encouraging as the restaurant fine‑tunes its offerings. “I want to hear the feedback from the community,” he said. “We need to learn something new every day.”
With its blend of familiar comfort food and bold new flavors, Pho & Boil aims to become a staple for Overland Park residents seeking both tradition and innovation on their plates.
