The food at Merle’s holds up as a full destination in its own right. The kitchen works with seasonal Idaho ingredients and turns out elevated comfort food that feels genuinely earned rather than calculated. The bison burger has a following for good reason. The charcuterie board pulls from local producers. And the brunch service on weekends — eggs Benedict, house-made pastries, Bloody Marys built with local vodka — draws a loyal crowd that shows up early and lingers long.

If you’re staying the night, the hotel rooms have been restored with a modern hand that respects what was already there. Clean lines, comfortable beds, and windows that remind you you’re in a real city with real history just outside.

But even if you’re just passing through Boise for a day, make time for an evening at The Owyhee. Sit at the bar. Order something with Idaho whiskey. Watch the city move past those windows. You’ll understand quickly why this place has been the center of Boise’s social life for more than a century — and why it shows no signs of relinquishing that role anytime soon.
