Franks Diner Keeps Madison Honest at 6 a.m

The Old Fashioned on the Capitol Square has been open since 2005, which in Madison restaurant years is practically a century. Most places on that corner have cycled through three or four identities in the same span. The Old Fashioned hasn’t changed its menu much, hasn’t chased trends, and still draws the kind of crowd that includes a state senator, a grad student, and a retired dairy farmer at the same bar on a Tuesday afternoon.

I first went on a cold January day when the square was empty and the wind was doing what Wisconsin wind does. Walking in felt like a reasonable decision. The interior is long and narrow, dark wood and old photographs, with a bar that runs most of the length of the room. It’s not trying to look like a supper club — it actually looks like one, because whoever designed it understood the difference.

The menu is rooted in Wisconsin classics without being ironic about it. Brandy Old Fashioneds, obviously — sweet or sour, with a branded cherry and an orange slice done right. I ordered mine sweet, which is how most Wisconsinites drink it and also the correct call. The bartender made it without a measuring cup and didn’t spill a drop, which tells you something about the pace of work here.

For food I went with the cheese curds and a walleye sandwich. The curds come out hot, battered in a light crust, and they squeak. If your cheese curds don’t squeak, they are too old. These squeak. The walleye is local when possible, fried until just done, served on a soft roll with tartar sauce. It’s not complicated. It’s good. That combination — uncomplicated and good — is harder to pull off than most restaurants admit.

There are also things like beer brats, a Friday fish fry in the traditional manner, and a pork tenderloin sandwich that I watched the table next to me eat with apparent joy. Prices are reasonable for the location — you’re paying Capitol Square rent, but the kitchen isn’t gouging you. A full lunch with a drink lands around $20-$25 before tip.

What I noticed most, sitting there on a slow weekday, was who comes in. It skews older in the afternoons, younger on weekend evenings. Legislative staffers grab lunch here. Families come for the fish fry on Friday nights. People celebrating something — a birthday, a retirement — end up here because it’s the kind of place that feels appropriate for marking time. That’s not an accident. The Old Fashioned has positioned itself as Madison’s living room for Wisconsin food, and it’s earned the right to call itself that.

Go for the fish fry on a Friday if you can, or come for a late lunch on a weekday when the bar has space. Sit at the counter if a stool is open. Order the Old Fashioned first, let the bartender make it without instruction, and see what happens. It’ll be right.
