Around 9 on a Saturday morning, the parking lot off Exchange Parkway is already half full. That’s your first signal. The second is the smell drifting through the door before you’ve even pulled it open — something buttery, faintly sweet, entirely serious.
Unrefined Bakery has been doing gluten-free and allergen-friendly baked goods since its original Dallas-area location, and the Allen outpost on Exchange carries the same philosophy: make food that people with dietary restrictions can actually enjoy, rather than food they’re supposed to feel grateful for. The distinction matters more than it sounds.
If you don’t have a gluten sensitivity yourself, you might walk past this one. That would be a mistake. The chocolate chip cookies have a proper chew, the kind that conventional bakeries sometimes lose when they go premium. The banana bread is dense without being gluey. The cinnamon rolls — and you should absolutely get one if they’re still stocked when you arrive, which is not guaranteed after 10:30 — have that pull-apart quality that makes you briefly forget whatever you were stressed about.
The menu rotates enough to keep regulars interested, but a few things stay consistent: the daily muffins, usually two or three varieties; a rotating selection of layer cakes sold by the slice; and a solid lineup of sandwich-style items for people who want something with more protein. They also do custom cakes for birthdays and events, which is how a lot of first-timers find the place — they ordered a cake for someone with celiac, discovered the frosting didn’t taste like a compromise, and came back on their own the following weekend.
Everything is free of gluten, dairy, and several other common allergens, which means people with multiple dietary restrictions can order without running a mental checklist. For anyone who has spent time navigating menus and asking servers about cross-contamination, that ease is not a small thing.
The space itself is compact and straightforward — display cases up front, a few tables, good light. It doesn’t try to be a full café experience. You order, you pay somewhere in the $4–$9 range per item depending on what you’re getting, and you find a spot or take your box home. The staff tends to be helpful without being performative about it, which is the right tone for 9 a.m.
Crowds build fast on weekend mornings, and popular items — the cinnamon rolls especially, but also whatever cake slice looks best that day — go quickly. Weekday mornings are calmer if you have flexibility. There’s also online ordering for people who want to plan ahead, which is worth knowing before you make a special trip for something specific.
Allen has no shortage of places to grab a pastry. What it has less of is a place where someone avoiding gluten doesn’t have to mentally brace for a lesser version of the thing. Unrefined Bakery is not trying to be a novelty. It’s just a bakery that happens to work for more people than most. That’s a harder thing to pull off than it looks.
