Chicken Fried Steak, Cold Beer, and a Dance Floor That Never Quits: Billy Bob’s Has Nothing on Plano’s Own Wild West Saloon

There is a moment, somewhere between the parking lot and the pit, when the smell hits you. It is wood smoke and beef fat and something primal — the kind of scent that bypasses the rational brain entirely and goes straight to appetite. That is the moment Hard Eight BBQ in Plano stops being a restaurant and starts being an experience.

Tucked off Headquarters Drive in the Legacy corridor, Hard Eight does not look like much from the outside. The building is big and low, the parking lot fills up fast, and there is almost always a line. Do not let any of that dissuade you. The line moves, and every minute you spend inching forward is another minute the smoke has to work on you, which means by the time you reach the pit, you are absolutely ready.

Here is how it works, and it is worth knowing before you walk in: Hard Eight is a serve-yourself pit experience. You walk up to the outdoor pit — a long, wood-burning, open-flame affair that is genuinely impressive to look at — point at what you want, and the pitmaster slices it right there. Brisket, ribs, sausage links, pork belly, jalapeño cheese sausage — all of it cooked over post oak and pecan, all of it priced by the pound. The sides come later, inside, and they are everything you need: jalapeño beans, creamed corn, coleslaw, potato salad. But the meat is the headline, and the meat earns it.

The brisket here is the kind that makes you stop mid-bite and say nothing, because words seem beside the point. The bark is dark and crackly, the fat has rendered down to something almost silky, and the smoke ring goes deep. If you have strong feelings about barbecue — and in Texas, most people do — Hard Eight will hold up to your scrutiny. If you are newer to the Central Texas tradition, this is a wonderful place to start your education.

What makes the Plano location particularly worthwhile is the atmosphere. The dining room is cavernous and loud in the best way: families at long tables, groups of coworkers loosening their ties, couples splitting a pound of ribs with complete abandon. There is cold beer on tap and sweet tea that does what sweet tea in Texas is supposed to do. The whole setup has an egalitarian, unpretentious quality that feels increasingly rare in a part of Plano that has gone notably upscale in recent years.

Go hungry, bring cash or card, and leave the calorie-counting at home. Come on a Thursday or Friday evening when the pit is firing at full capacity and the dining room has some noise to it. Wear something you do not mind smelling like smoke afterward — a small price, and honestly a pleasant reminder of the meal for the rest of the evening.

Hard Eight BBQ is not reinventing barbecue. It is doing something better than that: it is doing barbecue exactly right, with the kind of consistency and craft that earns genuine loyalty. In a city with no shortage of places to eat, that is worth driving for — even if you live right here in Plano.
