Sides deserve their own moment of appreciation. The coleslaw is cool and creamy without crossing into mayo overload. The cornbread walks the line between crumbly and moist. And the mac and cheese — the kind baked in a tray until the edges caramelize — is the sort of comfort food that makes you quietly grateful to be alive.

Baldy’s draws a cross-section of Bend that you don’t always see in the trendier downtown spots: construction crews pulling up at noon, families making it a weekly ritual, cyclists fresh off the Deschutes River Trail with the appetite of someone who has earned every calorie. It is the kind of place where regulars know the staff by name and the staff knows your usual order before you reach the counter.
