Canard Turns a Wine Bar Into Something Stranger

Canard is a wine bar on West Burnside that serves egg sandwiches at midnight, and that sentence alone should tell you something.

Gabriel Rucker’s little sibling to Le Pigeon opened in 2018 in a narrow space next to its more famous neighbor. Most people walk in expecting something precious — small pours, hushed atmosphere, a list that requires a sommelier on standby. What they get instead is a room that feels genuinely loose, with counter seating, close quarters, and a menu that seems designed to confuse anyone who came in with a plan.

The wine list is real and serious, organized by style rather than region, with a strong lean toward natural and low-intervention bottles. Prices range from reasonable to splurge, and the staff will actually talk you through it without performing expertise at you. A glass of something funky and orange will run you around $14–$18; bottles from the $40s on up. But the wine is almost beside the point if you haven’t figured out the food yet.

The egg sandwich is what gets written about most, and it deserves the attention. It’s on a brioche bun, stacked with a fried egg, smoked salmon, potato chips, and crème fraîche, and it costs around $16. It reads like late-night improvisation, but it’s been dialed in with the kind of precision you’d expect from a kitchen that’s been executing it for years. The potato chips inside the sandwich are not a gimmick. They provide exactly the right textural interruption.

Beyond that, the menu drifts through snacks and small plates that don’t quite fit any category: smoked fish rillettes, deviled eggs done a half-dozen different ways on rotation, fondue on occasion, fried chicken skins that arrive looking humble and taste like someone’s been thinking about them for weeks. Nothing costs very much. The whole point seems to be that you order several things, pour another glass, and stay longer than you meant to.

The room fills up fast after 8 p.m. on weekends. There’s no reservation system — you show up and put your name in, or you sit at the counter and skip the wait entirely. The counter is honestly the better seat anyway. You’re close to the kitchen, the bartenders are right there, and the whole operation feels less like a restaurant than like something someone built in their apartment for friends who really like wine.

Canard is open late by Portland standards — until 1 a.m. on Friday and Saturday, midnight most other nights — which means it also functions as a post-show destination for people coming from the Doug Fir or the Wonder Ballroom. This is not a coincidence. It’s exactly the kind of place that’s more fun after 10 than before it.

The neighborhood is lower Northwest, technically, just west of where Burnside starts climbing toward the hills. Street parking is possible on a good night. The walk from the Pearl takes about ten minutes if you want to justify the next glass.

First-time visitors often expect Canard to be Serious Wine Bar Theater. It isn’t. It’s just a late-night sandwich and a bottle of something cloudy and a room that doesn’t ask much of you. That’s rarer than it sounds.
