Walk through the doors and you’re immediately surrounded by vintage Mexican signage, neon lights, mounted animal heads, taxidermy of uncertain provenance, and a general sense that someone had a very specific and very committed vision for this place. It works completely. The chaos feels curated, which is its own kind of art.

Now, about the food. This isn’t Tex-Mex in the soft, safe sense. The kitchen leans into the Nuevo León tradition — northern Mexican cooking that’s hearty, bold, and unapologetically meat-forward. The cabrito, slow-roasted goat, is the dish that separates the curious from the committed, and if you’re even slightly adventurous, you owe it to yourself to order it. The fajitas are the real workhorse of the menu, arriving tableside on sizzling cast iron with flour tortillas that are clearly made by someone who cares deeply about flour tortillas. The queso is rich and deeply savory, the kind of thing you’ll think about on the drive home.

The bar program deserves its own paragraph. Cadillac Bar makes a margarita the old-fashioned way — fresh lime juice, good tequila, no sour mix, no apologies. The house margarita on the rocks is criminally drinkable, and the frozen version, served in a glass that’s frankly oversized, has probably been the deciding factor in more than a few memorable Houston evenings. The drink list also includes a solid selection of Mexican beers and a few classic cocktails that suit the cantina vibe perfectly.

Weekend nights here trend loud and festive, with a crowd that spans downtown professionals, tourists, and longtime regulars who’ve been coming since the Reagan administration. If you prefer a slightly more relaxed pace, weekday lunch is a revelation — the lunch specials are generous, the dining room is calmer, and you can actually have a conversation without leaning across the table.

The Warehouse District itself is worth exploring before or after your meal. The neighborhood has a gritty, industrial character that’s slowly giving way to creative businesses and nightlife, and Cadillac Bar feels like the anchor that held the block together through all of it. It’s the kind of place that defines a neighborhood simply by refusing to change.
