An Evening at Saltine Finds Norfolk at Its Loosest

Saltine opened in 2013 without a waterfront view, without a rooftop deck, and without much of the theatrical staging that Norfolk restaurants sometimes lean on to justify their prices. What it has instead is a raw bar that runs the length of the room and a kitchen that treats Mid-Atlantic shellfish with enough respect to let them mostly speak for themselves.

The restaurant sits on Granby Street just south of Brambleton, in a stretch that isn’t particularly scenic in any direction. The building is low-slung and brick, the signage understated to the point of near-invisibility. On a Thursday evening, the parking situation requires a little patience — there’s a lot nearby, but the neighborhood fills up earlier than most people expect.

Inside, the room is long and deliberately industrial: exposed ductwork, concrete floors, good pendant lighting over the bar. It seats maybe ninety people between the dining room and bar area, and by seven o’clock on a weeknight the noise level has climbed to the point where conversation requires some effort. The crowd skews professional — a lot of people who look like they came straight from somewhere with a badge reader — but it doesn’t feel exclusive. The servers move fast and talk straight.

The raw bar is the obvious starting point. Oysters rotate depending on what’s coming in from Virginia and Maryland waters, and the staff can usually tell you which harvest site they’re from without having to look it up. On a recent visit there were four varieties on offer, ranging from a briny Chincoteague to something flatter and milder from the Eastern Shore. A half-dozen runs between twelve and fifteen dollars depending on the selection, and the mignonette is sharp enough to actually cut through the shell liquor rather than drown it.

The shrimp and grits, which appear on nearly every regional best-of list that covers Norfolk, earns the attention. The grits are stone-ground and cooked longer than you’d expect, with a texture that holds up under the andouille and Gulf shrimp layered on top. It’s a sixteen-dollar lunch portion that becomes a twenty-two-dollar dinner plate, and the difference in size is noticeable. The deviled crab cake — crab, old bay, very little filler — is worth ordering without the remoulade, which sweetens it in a direction the crab doesn’t need.

Saltine’s wine list is short and competent without being interesting. The beer selection leans local, with a rotating handle or two from Virginia breweries. Cocktails are mixed well but not elaborately; the bartenders seem to prefer precision over showmanship, which suits the room.

By eight-thirty, the wait for a table without a reservation can run forty minutes or longer. Sitting at the bar avoids that entirely, and the sightlines into the kitchen from the far end of the counter are good enough to make it the better seat anyway. The check for two people — oysters, two entrees, two drinks each — lands somewhere around ninety to a hundred and ten dollars before tip, which is not cheap, but doesn’t feel like it’s reaching either.

What Saltine does consistently, and what keeps it on the short list of places Norfolk residents actually take out-of-town guests, is maintain a certain unforced seriousness about the seafood without making the room feel precious. The oysters are cold, the service is attentive without hovering, and the kitchen doesn’t seem to be trying to impress anyone in particular. That restraint, in a city with a lot of seafood restaurants working very hard to seem significant, turns out to be its own form of confidence.
