A 2,000-year-old low-fat, high-protein cheese called cancoillotte is gaining popularity in France. The cheese, which is made from skimmed cow’s milk, has been a staple in the eastern part of France near the Swiss border for centuries. However, it has recently gained a new following thanks to social media influencers who have discovered its health benefits.
What is Cancoillotte?
Cancoillotte is a soft, spreadable cheese that is high in protein and low in fat. It is made from skimmed cow’s milk that is fermented and coagulated, then turned into milk curds. The curds are drained and pressed to create a hard crumble, which is then ground, aged, and heated with butter, water, and salt to create the final product.
The cheese has a unique flavor profile that ranges from yeasty and fruity to stronger earthy, ‘barnyard’ aromas. It can be eaten hot or cold and is often served over roasted potatoes, meat, or as a dip for vegetables.
Why is Cancoillotte Gaining Popularity?
Cancoillotte’s popularity can be attributed to its health benefits and the influence of social media. French influencers such as Johan Papz and itscindyoff have been promoting the cheese on their social media channels, highlighting its low-fat and high-protein content. As a result, demand for the cheese has soared, with sales rising by 25% in the month of May alone.
The cheese’s popularity has also been boosted by its recent receipt of the Protected Geographical Indication (PGI) label, which recognizes its strong links to the region where it is produced. With 22 producers and 230 local dairy farmers supplying the milk, each brand of cancoillotte has its own distinctive flavor profile.
