Palomino Coffee Emerges

After the demise of Parable Coffee, former employees Brian Dages and Marco Colmenares Aguilar have launched a new coffee pop-up, Palomino, inside Cordial in the University District.

A New Chapter

Dages and Colmenares Aguilar were part of the original Parable Coffee team, which debuted in 2020 with a unique, community-centered approach. However, as the business grew, the owners’ vision shifted, and the shop ultimately closed, leaving employees with unpaid wages.

The two baristas saw an opportunity to revive the spirit of Parable Coffee with Palomino, operating from 8 a.m. to 2 p.m. Wednesday through Saturday. They aim to provide high-quality lattes and service, free from the constraints of corporate ownership.

The story of Palomino is one of redemption and community. The pop-up is housed in the former Bottle Shop, where Dages’ friend Nan Meece once worked. Meece, now an 18-year industry veteran, reflects on the cyclical nature of the service industry, where talented individuals often find new opportunities despite setbacks.

Palomino’s autonomy allows Dages and Colmenares Aguilar to focus on their craft, serving customers without answering to external owners. This approach has brought a sense of closure to the duo, who are grateful for the chance to rebuild and create something new.
