Four Las Cruces Restaurants Fined for Operating Without Permits

In May, four Las Cruces restaurants were fined by the New Mexico Environment Department’s Environmental Health Bureau for operating without valid permits. These establishments did not pay the required permit fees, leading to notices of violation.

Details of the Violations

The affected businesses include The Chocolate Lady, Pablito’s LLC, Spicy Bean, and Chilaso LLC. Each received a violation letter dated May 1, 2026, and were given 30 days to settle the fees along with a late fee.

The Chocolate Lady, located at 2379 Calle de Guadalup, and Pablito’s LLC at 3872 Ringneck Dr., were among those cited. Additionally, Spicy Bean and Chilaso LLC, both situated at 1001 E University Ave Ste B-1, were also on the list.

Regulatory Oversight

The Environmental Health Bureau oversees the Food Safety Program, which is responsible for issuing permits to food establishments. This program ensures that establishments comply with health and safety regulations to protect public health.
