Meridian’s Cider House Keeps It Simple and Pours It Right

On a Tuesday evening around six o’clock, the Meriwether Cider taproom on Eagle Road fills up faster than you’d expect for a weeknight. A couple splits a flight at the bar. A group of four claims the corner high-tops. The bartender knows at least half the room by name. This is not a destination spot that people stumble into — the regulars here made a deliberate choice, and most of them will tell you exactly why.

First reason: the cider is actually good. That sounds like a low bar, but cider varies wildly in this region, and Meriwether’s house pours land consistently on the drier, more complex end of the spectrum. The Pacific Northwest Apple is the one to start with — clean, not too sweet, with enough tartness to remind you you’re drinking fermented fruit and not a Capri Sun. If you’ve been burned by cloying hard ciders elsewhere, order this one first. The seasonal rotations tend toward interesting: elderflower, hopped varieties, fruit-forward options that don’t tip into dessert territory. A flight of four runs around $12, which is the right way to figure out where you land before committing to a full pour.

Second reason: the space earns its time. It’s open and comfortable without trying too hard — exposed wood, good lighting that isn’t too dim or too bright, a patio that actually gets used when the Treasure Valley weather cooperates. There’s no live music every night, no trivia night every Thursday, no constant ambient noise competing with conversation. It functions well as a place to catch up with someone, which is rarer than it should be in Meridian’s bar scene.

Third reason: the food situation is handled. Meriwether doesn’t run a full kitchen, but the food options they do carry — charcuterie boards, some snack-style plates — are solid enough to anchor a two-hour visit. The charcuterie is worth ordering; the meats and cheeses are genuinely selected rather than thrown together from whatever was on sale. If you’re coming in for dinner, eat first or supplement elsewhere, but you won’t leave hungry if you plan around it.

Fourth reason: it’s approachable for people who don’t drink cider. This matters more than it might seem. Meriwether doesn’t run an exhaustive craft beer list, but they carry a few options for the person in your group who reflexively reaches for an IPA. Nobody makes a thing of it. The staff tends to be low-pressure and knowledgeable — they’ll walk you through the flight options without being performative about it.

Pricing across the board sits in the moderate range for Meridian: a pint is typically $7–9, the flights are a reasonable entry point, and you won’t feel like you overspent walking out. Parking in that stretch of Eagle Road near Fairview is easy, which is a small but genuine convenience.

If there’s a caveat, it’s that weekend evenings fill up and the wait for a table can stretch. Wednesday or Thursday hits the sweet spot: full taproom energy without the crush. Show up at six, grab a flight, stay for a couple of pours. That’s the visit.
